I promise this isn’t turning into a food blog. It is just that I have been really enjoying my time in the kitchen lately as it has given my brain something productive to do. We are currently in a waiting period for the coffee shop to open, so I am trying to keep busy with things I can control… like recipes!
This one is based off of my FAVORITE cookies! No bake cookies are one of the easiest and yummiest cookies, in my opinion.
Here’s the recipe:
- 3 cups oats
- 1 1/2 cups granulated sugar
- 1/4 cup hot chocolate mix
- 1 tbsp vanilla
- 1 cup peanut butter
- 1 stick salted butter
- 1/2c unsweeted almond milk
How to make it:
- Start by melting the butter in a pot on the stove, add the hot chocolate mix, milk, and sugar. Stir constantly. Bring it to a boil and let boil for about a minute (but not more!)
- Remove from heat and add oats, peanut butter, and vanilla. Stir well!
- Here’s where I do mine differently to help me with portion control:
- I scoop my no bake cookies into mason jars. I divide it into 4 jars. Then they sit in the fridge to set up. To eat, I grab a spoon and go to town. Each jar takes a couple sittings to get through as it is harder to eat with a spoon when its cold! This helps me to not eat it all at once!
- If you don’t want jars of this delicousness and want actual cookies instead, keep reading! From your warm pot spoon about a tablespoon worth of mix onto a cookie sheet with parchment paper. Leave a little bit of space between each cookie. Put the sheets in the fridge and wait for them to chill.
- Finally, ENJOY!!! &try to not eat them all at once 😉
